2 Christmas cheques will be given out: Sutherland School ($1000) and St. Mark School ($1000). This money will help fill hampers going to families less fortunate this season.

We will be taking a collection at the meeting for Ronald McDonald House.

APPETIZER MEATBALLS

 

1 pound ground round

1 egg

½ cup soft bread crumbs

¼ cup skim milk (I use 2%)

cup onion -- finely chopped

½ teaspoon Worcestershire sauce

 

---Sauce—(use if not using dips)

½ cup ketchup

½ cup chopped onion

cup sugar

cup vinegar

1 tablespoon Worcestershire sauce

teaspoon pepper

 

Combine the first six ingredients; mix well. Shape into 1-inch balls. In a skillet over medium heat, brown meatballs; drain. Place in a 2 ½ -quart baking dish. Combine sauce ingredients. Pour over meatballs. Bake, uncovered, at 350° F 50 - 60 minutes or until meatballs are done. Yields: 4 dozen

Stab meatball with toothpick.

Dip suggestions: Ranch, Honey Mustard (dressing), Salsa, Sour Cream/Old Bay, Sour Cream/Dill, BBQ Sauce, HP Sauce, Tziki, Sweet ‘n Sour Sauce, Cream Cheese Chip Dip, Honey/Garlic sauce (VH), to name a few.

 

SPICED APPLE SYRUP WITH CLEMENTINE & CLOVES

Ingredients                                                      Method

 

200 ml apple juice                                          Heat the apple juice with the whole spices, ginger, zest and sugar. Bring to the boil, then simmer for 10 mins.

1 cinnamon stick                                            

1 teaspoon whole allspice                              Remove from the heat and leave to cool, then strain the syrup into small bottles.

2 whole 1 mace blade

cloves

small strip fresh ginger

clementine, zest finely peeled with a vegetable peeler

100 g golden caster sugar

Fall Harvest Spice Cake

 

1 Spice or carrot cake mix

1 cup water

3 eggs

cup vegetable oil

cup apple butter

Maple buttercream frosting:

               4 tablespoons margarine; softened

               ¼ cup maple syrup

               3 cups powdered sugar

2 cups walnuts; coarsely chopped

¼ cup chocolate chips

¼ cup almonds

2 tablespoons dried apricots; chopped

2 tablespoons dried cranberries; chopped

2 tablespoons raisins

 

1. Preheat oven to 375°F. Grease and flour two 9 inch round baking pans.

2. Combine cake mix, water, eggs, oil and apple butter in medium bowl. Beat on low speed of electric mixer until blended; beat at medium speed 2 minutes. Pour batter into prepared pans.

3. Bake 35 to 40 minutes until wooden toothpick inserted into center comes out clean. Let cool in pans on wire rack for 10 minutes. Remove to racks, cool completely.

4. Prepare Maple Butter cream frosting by beating margarine and maple syrup in a small bowl until blended. Gradually beat in powdered sugar until smooth.

5. Place 1 cake layer on serving plate; frost top with maple buttercream. Top with second layer; frost top and side of cake with frosting. Press walnuts into side of cake.

6. Pipe chocolate onto cake to form a tree trunk. Combine almonds, apricots, cranberries and raisins. Sprinkle on top of cake to form leaves.

**If dried cranberries are unavailable use additional chopped dried apricots and raisins.

ORANGE OOZE CUPCAKES

 

FILLING

8 ounces cream cheese -- softened

1 egg

cup sugar

Yellow and red food coloring

6 ounces chocolate chips

 

CUPCAKES

3 cups flour

2 cups sugar

½ cup cocoa

2 teaspoons baking soda

½ teaspoon salt

2 cups water

½ cup plus 2 tablespoons vegetable oil

2 tablespoons cider vinegar

2 teaspoons vanilla

 

Preparation time: 20 to 25 minutes; cooking time: 25 minutes; utensils: measuring cups and spoons, cupcake baking pans, paper cupcake liners, two small mixing bowls, electric mixer, mixing spoon, large mixing bowl, oven mitts.

 

Preheat oven to 350°F. Line cupcake baking pans with paper cupcake liners.

 

In small mixing bowl, use electric mixer to combine cream cheese, egg and sugar. Blend in 2 drops yellow food coloring and 1 drop red food coloring, adding more coloring if necessary to reach desired shade. Use mixing spoon to stir in chocolate chips; set filling aside.

 

In large mixing bowl, combine flour, sugar, cocoa, baking soda and salt; set aside.

 

In second small mixing bowl, combine water, vegetable oil, vinegar and vanilla. Add contents of small mixing bowl to large mixing bowl and stir with mixing spoon to combine.

 

Using mixing spoon or soup spoon, fill cupcake liners half full with cupcake batter, then place 1 teaspoon filling at center of each. As cupcake bakes, the batter will rise to surround the filling.

 

Wearing oven mitts, place cupcake pans in oven; bake approximately 25 minutes or until cupcakes test done. When done, wear oven mitts to remove pan from oven and turn off oven.

 

If desired, frost with orange icing--or just let the orange filling ooze out as a surprise.

Crockpot Chicken, Rice and Broccoli Casserole

4 large chicken breasts

1 can Cream of Chicken soup

1 can Cream of Celery soup

1 can Cream of Broccoli soup

½ cup diced celery

2 cups broccoli cut up

1 cup Minute rice

 

Mix in crock-pot the 3 cans of soup and rice. Place the chicken on top of the mixture, then add the diced celery and broccoli. Cook for 3 hours on high or 4 hours on low. Makes 4 servings.

Cheesy Apple Ham Grill

 

1 cup chopped apple

½ cup MIRACLE WHIP or MIRACLE WHIP LIGHT Dressing, divided

¼ cup chopped walnuts

Dash ground cloves (opt)

8 slices raisin cinnamon bread

4 slices KRAFT Natural Sharp Cheddar Cheese, cut in half

1 package OSCAR MAYER Smoked Cooked Ham Slices (6 oz)

 

Mix apple, cup of the dressing, walnuts and cloves. For each sandwich, top 1 bread slice with 1 cheese slice, apple mixture, ham, second cheese slice and second bread slice. Spread outside of sandwiches with remaining dressing. Grill until lightly browned on both sides.

 

Makes 4 sandwiches.

 

Chocolate Malt Peppermint Cooler

 

3 cups chocolate milk

1 quart vanilla or chocolate ice cream

¼ cup malted milk powder

½ teaspoon peppermint extract

teaspoon ground cinnamon

hard peppermint candies -- coarsely crushed

6 peppermint sticks

 

In a blender container place the chocolate milk, half of the ice cream, the malted milk powder, peppermint extract and ground cinnamon. Cover and blend till smooth. Pour into six large, chilled glasses. Top each drink with a scoop of remaining ice cream. Sprinkle with crushed candy pieces. Place a peppermint stick in each glass.

WOW what a day! Thank you everyone that came out to one of our biggest events!

We had a great spot, right beside the beer gardens. We served pancake breakfast in the morning, then burgers and hot dogs in the afternoon and evening.

Unfortunately, we were unable to sell 50-50s as we were a little light on volunteers.

Spicy Lime Marinade

 

1 cup fresh lime juice                          2 teaspoons dried oregano leaves

½ cup olive oil                                      2 teaspoons salt

2 tablespoons diced yellow onion        2 teaspoons ground black pepper

2 tablespoons chopped cilantro           1 teaspoon red pepper flakes

1 teaspoon fresh chopped garlic

 

Combine all ingredients and whisk or shake until emulsified. Use as marinade for poultry, seafood or vegetables, marinating 30 minutes to 2 hours.

 

Grilled Potato & Onion Packages

 

cup olive oil

1 tablespoon Dijon mustard

2 tablespoons fresh thyme (or 1 tablespoon dried) -- chopped

1 teaspoon salt

1 teaspoon ground pepper

2 lbs white skinned potatoes peeled -- sliced 1/4″ thick

2 large red onions, halved -- sliced 1/2″ thick

PAM spray

Fresh thyme sprigs -- for garnish

 

Combine oil, mustard, thyme, salt and pepper in a large bowl. Whisk to blend well. (Can be prepared 6 hours ahead. Cover and let stand at room temperature.) Prepare barbecue (medium-high heat.) Add potatoes and onions to mustard and oil. Toss to coat. Set 1 long sheet of heavy duty aluminum foil (or 2 sheets of regular) on work surface.  Spray foil with PAM. Place vegetables in center of foil. Pour remaining oil over. Cover with more foil; roll in top and bottoms of foil - then each end to make a package. Seal tightly. Place package on grill; cook approximately 25 minutes. Remove from grill, slit package top; fold back and garnish with thyme sprigs.

JELL-O FRUIT CAKE

BATTER:

3 tablespoons oil

1 beaten egg

Pinch of salt

½ cup milk

¾ cup sugar

1 ½ cup flour

2 teaspoons baking powder

½ teaspoon vanilla

 

FRUIT LAYER:

4 cups fresh fruit, sliced

1 package (3 oz) Jell-O

2 tablespoons sugar (if using rhubarb)

 

TOPPING:

¼ cup flour

½ cup sugar

1 teaspoon cinnamon

3 tablespoons butter

 

1. Combine batter ingredients. Place in a greased 10x12 pan.

2. Combine fruit layer ingredients and spread evenly over batter.

3. Crumble together topping ingredients and sprinkle over fruit layer.

4. Bake at 375°F for 35-40 minutes.

 

 

LEMON COOLERS

1 box lemon cake mix

6 ounces Cool Whip

1 egg

 

Mix well by hand. Drop by teaspoons into bowl of powdered sugar and coat.  Shape into balls.

Bake at 350°C for 10 to 12 minutes.  DO NOT OVERBAKE.

 

OREO MILKSHAKES

2 cups vanilla ice cream

2/3 cup milk

8 Oreo cookies

1 teaspoon vanilla extract, optional

whipped cream for serving, optional

Add the ice cream, milk and Oreo cookies to your blender. Pulse until mostly smooth.

Serve in large glasses with whipped cream if desired.

Homemade Chips, Lo cal, lo fat.

Servings: 4

 

1 unpeeled baking potato

2 tablespoons fat free Italian dressing

 

Preheat oven to 500F. Lightly spray cookie sheet with vegetable cooking spray. Slice unpeeled baking potato into very thin slices. In bowl, toss potato slices with dressing until evenly coated. Arrange potatoes in single layer on cookie sheet. Bake about 20 minutes or until lightly browned on both sides, turning once after 10 minutes.

 

Peppermint Cooler

Yield: 1 Serving

 

¾ cup vanilla regular, low-fat or non-fat ice cream

¾ cup whole or skim milk

5 peppermint candies

Ice cubes

 

Process first 3 ingredients in an electric blender until smooth. Scrape down sides and add 1-3 ice cubes to bring mixture to the 2-cup level. Process until smooth. Serve immediately.

6 medium Granny Smith apples -- unpeeled, sliced

½ cup golden raisins

2 tablespoons canola oil

2 tablespoons brown sugar

 

Cut 6 8-inch pieces of aluminum foil. Prepare the apples and place each sliced apple on a square of foil. Sprinkle raisins, oil, and sugar over each apple.

 

Fold the foil into a package. Prepare an outside grill with an oiled rack set 6 inches above the heat source. On a gas grill, set the heat to medium. Grill the packets for about 30 minutes until the apples are tender. Remove from the foil and serve.

BUTTERSCOTCH PRETZEL BARS

This sweet-salty dessert goes together quickly with a no-bake bottom and a topping of butterscotch pieces and whipping cream heated on the stove.

 

Ingredients

Non-stick cooking spray         

1 1/2 cups powdered sugar
1 cup creamy peanut butter

tablespoons butter, melted
1 cup crushed pretzels (about 6-1/2 ounces)

11 - ounce package (about 2 cups) butterscotch-flavored pieces
1/4 cup whipping cream

1/2 cup coarsely crushed pretzels
1/2 cup chopped peanuts

 

Directions

  1. Line a 13x9x2-inch pan with foil. Lightly coat the foil with cooking spray; set aside. In a large mixing bowl, stir together powdered sugar, peanut butter and melted butter. Stir in ½ of crushed pretzels. Press mixture firmly into the bottom of prepared pan.
  2. In a heavy medium saucepan, combine butterscotch pieces and whipping cream. Stir over low heat until pieces are just melted.
  3. Carefully spoon and spread butterscotch mixture over crumb mixture in pan. Sprinkle remaining coarsely crushed pretzels and the peanuts evenly over butterscotch mixture; press gently.
  4. Cover and chill for at least 2 hours. Cut into bars to serve. Store in refrigerator for up to 1 week.

Winter Crock pot Chicken Stew  from the kitchen of Cheryl Card

 

Package of chicken breasts

Can of turkey gravy

Can of chicken broth

Carrots, potatoes and onion (cut into bite size pieces)

1-2 cups flour

Spices: tsp. paprika, salt, pepper and 2-3 bay leaves

 

Turn crock pot on high. Into crock pot put: turkey gravy, chicken broth and bay leaves. Stir.

Put flour in shallow dish. Add paprika, salt and pepper. Mix.

Cut chicken into bite size pieces. Roll chicken in flour mixture then add to crock pot. Stir.

Add carrots, potatoes and onion. Stir. Put lid on and let it cook.

IMPORTANT: Crock pot stays on high so the juice can bubble (this will make lots of gravy).

Cooking time is 4-5 hours depending on how much veggies you put in.
